Nissan Backpack Bottle

Just recently got this Thermos Nissan Backpack bottle, it's probably the most highly engineered beverage container on earth. Easy to pour or drink out of, and today I filled it with hot coffee near 7:30am and it was still literally piping - extremely - hot at 4pm. This really amazed me. The top pops open and flips back with ease and it's very comfortable in your hand. It holds 16 ounces. It's clever little locking mechanism makes you feel comfortable about dropping onto the seat of your car sideways, and it's sturdy stainless construction and thick plastic top with silicone gaskets will survive rolling around on the floor after it's empty (get real, who doesn't do that). Everything made should be built as tough as this thing.

What is happening to Starbucks?

I've come to realize that not all coffee is smart coffee, and this Sumatra is just a poorly roasted coffee. It's not oily enough to hit as dark a roast as they're trying to hit here, and the result is a bitter, dry, slightly burnt plastic smelling roast.

What's sadder is that I can identify with the beautiful shape and regularity of the beans that probably as a light roast or full city medium roast, this coffee would have been superb. Even with a good burr grinder, I'm getting two possible grinds with this: the consistency of chickory chips or cocoa powder. Why are you over roasting the coffees, Starbucks? Don't fall for this one, it's a flavorless failure.

Monterrey Chicken with Cilantro Cream Sauce

I've got a great new Atkins-friendly recipe.
I recently got some cilantro from Joe Bjorklund's garden, and used it to make a delicious cream sauce.

Sauce:
Gently warmed together are:
1/2 C. Sour Cream
Splash of half and half
4 T. finely chopped Cilantro
1/2 t. Sriracha Hot sauce

For the Chicken:
4 boneless, skinless chicken breasts, sautéed in olive oil, seasoned with fresh ground coriander, black pepper, 2 T. of bread crumbs and sea salt.
Covered with shredded Monterrey Jack Cheese and finished in the oven.

Jimmy's Extra Chunky Bleu Cheese Dressing

Absolutely one of the best commercially prepared dressings, Jimmy's Extra Chunky Bleu Cheese Dressing is fantastic. It's rich and creamy, a very sturdy recipe that's hearty and everything you'd expect in a fine restaurant-prepared dressing. If you enjoy buffalo wings, you shouldn't be without a jar of this great dressing.

New York Strip Salad with Bleu Cheese.

Tonight we grilled New York Strips, brought them to room temperature and peppered them liberally.

Next I quick seared them on the grill and then added wet mesquite chips to the coals.

The wet wood chips killed the fire, and I covered the grill to let them smoke for ten minutes.

The last two minutes I crumbled Maytag Bleu cheese to melt on them.

I let the Strips rest for five minutes after taking them off the grill, sliced them thin against the grain then served the steaks over a bed of field greens tossed in a small amount of Jimmy's Bleu Cheese Dressing.

Grilled Asparagus Salad

Tonight we grilled asparagus spears and scallions, lightly brushed in olive oil and sprinkled with coarse sea salt, cut them into bite sized pieces.

We served this over a bed of romaine lettuce splashed with a bit of white wine and topped the salad with feta cheese, almond slivers, fresh dill and very good olive oil.

Greeky Bacon Salad

This salad is all about the dressing.

Dressing:
6 slices of bacon cooked extra crisp and crumbled, still hot
1/4 c feta cheese crumbles
2 T. balsamic vinegar
6 T. extra virgin olive oil

Shake it together in a tight container.

Pour over romaine lettuce cut bite size and toss.
Garnish with pitted Calamata olives, fresh cracked black pepper and sunflower kernels.

V-8 Black and Bleu Salad

I've decided to make a lot of salads this summer, new ideas, old ideas and variations.
I'll post as I make them. They're more a list of ingredients because I didn't measure anything, just let it fall.

Blackened Grilled Chicken
Bleu Cheese crumbles
Pan toasted pecans
Avocado slices
on
Baby spinach leaves tossed in a dressing of 2 T. V-8 Juice and 6 T. Extra virgin olive oil.

Zatarain's Blackened Spices

I wanted to say how much I've enjoyed this Zatarain's Blackened Seasoning spice mix. It's pure wonderful flavor, rich and complex, it can make the ultimate spicy burger or chicken fillet. It does have a pretty good kick to it, but I wouldn't say its only function is heat, in fact you really have to be liberal with it's application for the recipe to become "spicy hot".

My favorite use for this is heartily seasoning a burger, then topping with a little more cracked black pepper and Maytag Bleu Cheese. Serve with a Kosher dill wedge over a bed of Romaine lettuce, and you've got a high protein low carb delicious lunch or dinner.
